Potassium-Rich Avocado Toast

  • 1 ripe avocado
  • Juice of 1/2 lemon
  • Sea salt
  • 2 slices whole-grain bread, toasted
  • Red pepper flakes or multi-peppercorns

Cut the avocado in half. Remove the pit and scoop flesh into a bowl. Add lemon juice, sea salt and spices to taste. Mash together with a fork, leaving a slightly chunky texture. Spread onto toast.
